Ingredients

  • 1 small onion, diced
  • 2 (14 1/2 oz.) cans whole tomatoes, undrained
  • 1 (6 oz.) can tomato paste
  • 1 (8 oz.) can tomato sauce
  • 2 tsp. brown sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. dried whole oregano
  • 24 jumbo shells
  • 2 (10 oz.) packages frozen chopped spinach, thawed and drained
  • 1 (16 oz.) cottage cheese

Instructions

  1. Place a large saucepan over medium heat.
  2. Spray with cooking spray and sauté the diced onion until tender.
  3. Add the undrained canned tomatoes, tomato paste, tomato sauce, brown sugar, salt, pepper, and dried oregano. Stir well.
  4. Bring to a boil, then cover and simmer for 20 minutes, stirring occasionally.
  5. Cook the jumbo shells according to package instructions, then drain.
  6. Stuff each cooked shell with the thawed and drained chopped spinach and cottage cheese mixture.
  7. Serve the stuffed shells with the prepared tomato sauce.
