- Drain spinach, pressing out as much water as possible.
- Saute minced onion in margarine, adding the ground oregano.
- Combine cooked spinach, onion, 1/2 cup sour cream, well beaten egg, lemon juice, and additional salt to taste.
- Spoon the mixture into unbaked pastry shells.
- Bake in a 350°F oven for 30 minutes or until golden brown.
- Spoon remaining sour cream over the tarts and garnish with ripe olives just before serving.
