Ingredients

  • 10 oz. frozen spinach
  • 1 tsp. salt
  • 1/4 tsp. grated lemon peel
  • 2 Tbsp. minced onion
  • 1 Tbsp. margarine
  • 1/8 tsp. ground oregano
  • 1 cup sour cream, divided
  • 1 egg
  • 1 tsp. lemon juice
  • 6 unbaked pastry shells

Instructions

  1. Cook spinach according to package directions, adding 1 teaspoon salt and 1/4 teaspoon lemon peel.
  2. Drain spinach, pressing out as much water as possible.
  3. Saute minced onion in margarine, adding the ground oregano.
  4. Combine cooked spinach, onion, 1/2 cup sour cream, well beaten egg, lemon juice, and additional salt to taste.
  5. Spoon the mixture into unbaked pastry shells.
  6. Bake in a 350°F oven for 30 minutes or until golden brown.
  7. Spoon remaining sour cream over the tarts and garnish with ripe olives just before serving.
