A hearty homemade tomato soup with rich flavors of ripe tomatoes, onions, and herbs, perfect for comforting meals or casual gatherings, easily preserved for later enjoyment.

Ingredients

  • 14 qt. ripe tomatoes
  • 1 stalk celery
  • 14 Tbsp. flour
  • 13 Tbsp. butter
  • 8 Tbsp. sugar
  • 7 medium onions
  • 14 sprigs parsley
  • 3 bay leaves
  • 3 Tbsp. salt
  • 2 tsp. pepper

Instructions

  1. Wash, clean, and cut up the tomatoes.
  2. Chop onions, celery, parsley, and bay leaves.
  3. Add the chopped vegetables to the tomatoes.
  4. Cook until the celery is tender, then put the mixture through a sieve.
  5. Make a thin paste of the flour and butter, using a little of the tomato juice.
  6. Add the flour and butter paste to the boiling soup, stirring constantly to prevent scorching.
  7. Add salt, sugar, and pepper to the soup.
  8. If the soup is lumpy, put it through the sieve again.
  9. Fill pint jars with the hot soup.
  10. Put on lids tightly and process in a hot water bath for 15 minutes.
