Spinach With Cherry Tomatoes

A quick, vibrant dish combining tender spinach with sweet cherry tomatoes, garlic, and olive oil, perfect for a light, healthy side or vegetarian main course.

Ingredients

  • 1 cup small cherry tomatoes, stemmed
  • 1 teaspoon olive oil
  • 1 small clove garlic, minced
  • pinch of ground pepper
  • 5 ounces fresh spinach, stems removed and large leaves torn into smaller pieces

Instructions

  1. Rinse cherry tomatoes and pat dry.
  2. Place tomatoes in a medium nonstick skillet and heat over medium, shaking the skillet until several tomatoes pop their skins, about 5 minutes.
  3. Combine olive oil, minced garlic, and ground pepper in a small bowl; add to the skillet with tomatoes.
  4. Toss to combine and coat the tomatoes.
  5. Layer torn spinach leaves over the tomatoes, cover the skillet, and cook over medium heat until the leaves are wilted but not mushy, about 3 minutes.
  6. Stir once to combine and transfer to a serving dish.
  7. Serve warm or at room temperature.
