Ingredients

  • 3 lb. medium shrimp, peeled and deveined
  • 1 bunch green onions, chopped
  • 2 Tbsp. margarine
  • 1/2 cup chicken broth
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. Cajun seasoning
  • 6 servings angel hair pasta
  • 1/2 cup white wine
  • 2 Tbsp. flour

Instructions

  1. Cook shrimp in margarine; remove shrimp and set aside, saving the shrimp broth.
  2. Add 1/4 cup of the broth to the pan and reduce for 5 minutes.
  3. Add white wine and cook for several more minutes.
  4. Stir in Cajun seasoning, Dijon mustard, and 1 tablespoon of flour to thicken the sauce.
  5. Gradually thicken the mixture until it reaches a thin paste-like texture.
  6. Add chopped green onions and cooked shrimp to the sauce.
  7. Stir until shrimp are coated with the sauce.
  8. Serve over cooked angel hair pasta.
