Spring Lemonade Salad

A refreshing springtime salad combining citrus, marshmallows, and nuts with a creamy, tangy lemon-flavored pudding base, perfect for brunches, potlucks, or light desserts.

Ingredients

  • 1 small can frozen lemonade
  • 1 Tbsp unflavored gelatin
  • 1 pkg vanilla pudding mix (not instant)
  • 2 c Cool Whip
  • 1 c slivered almonds
  • 1 c small marshmallows
  • 1/4 c maraschino cherries
  • 1 can mandarin oranges, drained

Instructions

  1. Prepare the frozen lemonade as directed on the can.
  2. Mix the unflavored gelatin with 1/4 cup of the prepared lemonade and let stand for 5 minutes.
  3. Combine the gelatin mixture with the vanilla pudding mix and add 1 3/4 cups of the remaining lemonade.
  4. Cook over medium heat, stirring constantly, until the pudding mixture boils.
  5. Allow the mixture to cool.
  6. Fold in the Cool Whip, slivered almonds, small marshmallows, maraschino cherries, and drained mandarin oranges.
  7. Pour the mixture into a mold or a 9 x 13-inch pan.
  8. Chill until set before serving.
