Ingredients

  • 3 c. raw spinach
  • 3 hard-cooked eggs, chopped
  • 6 green onions, chopped
  • 4 strips bacon, cooked and crumbled
  • 1/2 c. sour cream
  • 1/2 c. Miracle Whip
  • 2 Tbsp. sugar
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1/2 tsp. vinegar

Instructions

  1. Wash and stem the spinach.
  2. Crisp the spinach in ice water.
  3. Dry the spinach thoroughly.
  4. Tear the spinach into bite-sized pieces to make 3 cups.
  5. Place the spinach in a salad bowl with chopped eggs and green onions.
  6. In a separate bowl, mix sour cream, Miracle Whip, sugar, pepper, salt, and vinegar to make the dressing.
  7. Pour the dressing over the salad and toss gently.
  8. Top with crumbled bacon before serving.
