Maine Fish Chowder

A hearty Maine fish chowder featuring tender haddock, potatoes, onions, and smoky salt pork, all simmered in rich milk for a comforting seafood experience.

Ingredients

  • 1/4 lb. salt pork, diced
  • 6 slices bacon, diced
  • 2 to 3 onions, diced
  • 4 cups potatoes, cubed
  • 1 to 2 cups water
  • 2 lb. haddock, skinned and boned
  • 2 teaspoons salt or to taste
  • 1/4 teaspoon pepper
  • 4 cups whole milk
  • 2 to 4 tablespoons butter

Instructions

  1. Slowly cook salt pork or bacon until crisp.
  2. Pour off most of the fat.
  3. Add diced onions and cook slowly until yellow.
  4. Add cubed potatoes and water to nearly cover.
  5. Cover and simmer for 5 minutes.
  6. Place cut-up fish on top of the mixture.
  7. Season with salt and pepper.
  8. Add more water if necessary and bring to a simmer.
  9. Cover and cook on lowered heat until potatoes are done (about 10 minutes).
  10. Meanwhile, in the top of a double boiler, heat the milk and butter.
  11. Add the heated milk and butter to the cooked fish mixture.
  12. Cool and refrigerate for 8 hours before reheating to serve.
