- Sift together flour and baking powder.
- In separate bowl, beat eggs until light.
- Add sugar and anise seed.
- Mix well.
- Add lemon peel and flour mixture.
- Mix well.
- Chill one hour or until firm enough to handle.
- Roll dough to 1/2-inch thickness.
- Use springerle mold or your favorite cookie cutter.
- Place on cookie sheet 1/2-inch apart and leave exposed to air overnight.
- Preheat oven to 350° and bake 30 minutes or until done.
- Store covered. Best to wait three weeks before serving.
- Will keep for months. Makes 2 1/2 dozen.
