Ingredients

  • 1 cup mashed potatoes
  • 2 cups warm milk
  • 3 cups flour
  • 1/2 teaspoon salt
  • 2/3 cup shortening
  • 3/4 cup sugar
  • oil for frying
  • 2 eggs beaten
  • 1 package yeast

Instructions

  1. Dissolve the yeast in 1/4 cup warm water and let it activate.
  2. Mix the mashed potatoes and warm milk together.
  3. Add the flour, salt, shortening, and sugar to the potato and milk mixture.
  4. Add 3 more cups of flour and knead the dough until smooth.
  5. If the dough is too soft, add an additional 1 cup of flour.
  6. Let the dough double in size, then roll it out and cut with a doughnut cutter.
  7. Allow the cut doughnuts to rise until they are twice their original size.
  8. Fry the doughnuts in deep oil heated to 390°F until golden brown.
  9. Remove from oil and drain. Serve warm or at room temperature.
