Ingredients

  • 1 lb. squash
  • 1/2 stick butter
  • 1 egg
  • 1/2 cup mayonnaise
  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped green pepper
  • 1 cup grated cheese
  • 1/2 cup buttered cracker crumbs
  • chopped pimento

Instructions

  1. Clean, slice, and boil the squash until tender.
  2. Drain the squash and mix it with butter, egg, mayonnaise, chopped onion, chopped green pepper, grated cheese, chopped pimento, and buttered cracker crumbs.
  3. Pour the mixture into a buttered casserole dish.
  4. Bake at 350°F for 30 minutes until golden and bubbly.
