Ingredients

  • 4 summer squash
  • 6 to 8 slices bacon
  • 1 green pepper
  • 1 tomato
  • 1 onion
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook bacon until crisp.
  2. Cook squash 6 to 8 minutes until tender, but not too soft.
  3. Cut squash in half lengthwise and scoop out and discard seeds.
  4. Mix chopped green pepper, chopped tomato, chopped onion, cooked bacon, and shredded Cheddar cheese.
  5. Fill the squash halves with the mixture.
  6. Dot with butter and bake for 20 minutes at 400°F.
