Ingredients

  • 8 small zucchini squash
  • 1 medium onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup butter
  • 2 teaspoons water

Instructions

  1. In a large skillet over moderate heat, saute sliced onion in butter until translucent. Remove onion and set aside.
  2. Cut the zucchini squash into 1/2-inch thick rounds.
  3. Saute the zucchini in the remaining butter until lightly browned.
  4. Add 2 teaspoons of water, salt, and pepper to the skillet.
  5. Cover with a tight-fitting lid and cook for 6 to 8 minutes.
  6. Add the cooked onion back to the skillet.
  7. Use a fork to gently blend the onion into the zucchini, avoiding overcooking to prevent sogginess.
