Ingredients

  • 3 lb. Hubbard squash
  • 2 Tbsp. butter or margarine
  • 1 cup sour cream
  • 1/2 cup finely chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Cut squash into serving pieces; remove seeds, fibers, and rind. Cut into cubes.
  2. Heat 1 inch salted water to boiling.
  3. Add squash to boiling water.
  4. Cover and cook for 15 to 20 minutes or until tender.
  5. Drain the cooked squash.
  6. Preheat oven to 400°F (200°C). Mash the cooked squash.
  7. Stir in butter or margarine, sour cream, chopped onion, salt, and pepper.
  8. Turn the mixture into an ungreased 1-quart casserole.
  9. Bake uncovered for 20 to 30 minutes.
