- Cut squash into serving pieces; remove seeds, fibers, and rind. Cut into cubes.
- Heat 1 inch salted water to boiling.
- Add squash to boiling water.
- Cover and cook for 15 to 20 minutes or until tender.
- Drain the cooked squash.
- Preheat oven to 400°F (200°C). Mash the cooked squash.
- Stir in butter or margarine, sour cream, chopped onion, salt, and pepper.
- Turn the mixture into an ungreased 1-quart casserole.
- Bake uncovered for 20 to 30 minutes.
