Ingredients

  • 2 c. yellow squash
  • 1 onion, chopped
  • 1 egg
  • 2 tsp. margarine
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 pkg. Mexican corn bread mix

Instructions

  1. Stew the chopped squash with the chopped onion until tender.
  2. Drain the squash and onion mixture well.
  3. In a bowl, combine the drained squash and onion, then add the egg, margarine, salt, and pepper, stirring to mix.
  4. Add the Mexican corn bread mix to the squash mixture and stir until well combined.
  5. Drop spoonfuls of the batter into hot oil and fry until golden brown.
