Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 eggs
  • 14 ounces frozen squash, thawed or 1 1/2 cups grated raw yellow squash
  • 2/3 cup salad oil

Instructions

  1. Preheat oven to 350°F.
  2. Grease two 8 1/2 x 4 1/4-inch loaf pans well.
  3. In a large bowl, with a fork, mix the flour, sugar, baking soda, ground cloves, ground cinnamon, ground nutmeg, salt, and baking powder.
  4. In a medium bowl, with a fork, beat the eggs, squash, and salad oil until blended.
  5. Stir the egg mixture into the flour mixture just until the flour is moistened.
  6. Pour the batter into the greased pans.
  7. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
  8. Cool the loaves in the pans on wire racks for 10 minutes.
  9. Remove from pans and cool completely on racks.
