Ingredients

  • 1 recipe Mushroom Stuffing
  • 12 pieces round steak (3 x 5 x 1/4 inch thick)
  • salt to taste
  • pepper to taste
  • 1 cup flour
  • 1/4 cup margarine
  • 2/3 cup chopped celery
  • 1/2 cup sliced mushrooms

Instructions

  1. Prepare the mushroom stuffing according to its recipe.
  2. Pound each piece of round steak very thin with a meat mallet.
  3. Sprinkle the steaks with salt and pepper.
  4. Place 2 tablespoons of mushroom stuffing on each piece of steak.
  5. Roll each steak as for a jelly roll and tie with butcher's string to secure.
  6. Coat each rolled steak with flour.
  7. Brown several roulades at a time on all sides in margarine in a Dutch oven for 5 to 7 minutes.
