Ingredients

  • 2 cups packed light brown sugar
  • 1/2 pound butter or margarine
  • 1 teaspoon salt
  • 6 quarts freshly popped popcorn
  • 1/2 cup light corn syrup
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon baking soda

Instructions

  1. In a 2 1/2-quart saucepan, combine light brown sugar, light corn syrup, butter or margarine, cream of tartar, and salt.
  2. Heat to boiling, stirring over medium-high heat.
  3. Stirring constantly, boil rapidly to hard ball stage (260°F), about 5 minutes.
  4. Remove from heat.
  5. Stir in baking soda quickly and thoroughly.
  6. Pour immediately over the popcorn in a large roasting or baking pan.
  7. Stir gently until all kernels are coated.
  8. Bake in a preheated oven at 300°F (approximately 150°C) for 1 hour, stirring 2 to 3 times during baking.
  9. Turn out immediately onto waxed paper; spread apart and allow to cool completely.
  10. Break apart and store in a tightly covered container.
