Ingredients

  • Saltine crackers
  • 1 c. butter
  • 1 c. brown sugar
  • 2 c. chopped cashews
  • 12 oz. chocolate chips

Instructions

  1. Lay saltine crackers in the bottom of an 11 x 17 inch cookie sheet.
  2. In a saucepan, heat butter and brown sugar together and cook until it reaches 250-268°F on a candy thermometer.
  3. Remove from heat and stir in chopped cashews.
  4. Pour the caramel mixture over the crackers and spread evenly.
  5. Sprinkle chocolate chips on top and place in an oven preheated to 400°F for 5 minutes.
  6. Remove from oven and spread melted chocolate evenly with a knife.
  7. Refrigerate for at least 30 minutes or until the toffee is hard.
  8. Break into pieces and serve.
