Instructions

  1. Trim fat from beef; cut beef with grain into 2-inch strips. Cut strips across grain into 1/8-inch slices.
  2. Toss beef, 1 tablespoon vegetable oil, 1 teaspoon cornstarch, 1 teaspoon soy sauce, salt and pepper in a glass bowl.
  3. Refrigerate for 30 minutes.
  4. Mix chicken broth, 2 tablespoons soy sauce and the sugar.
  5. Heat in wok or large skillet until hot.
  6. Add 3 tablespoons vegetable oil; rotate to coat.
  7. Add onion and garlic; stir-fry until garlic is brown.
  8. Add beef; stir-fry until beef is brown, about 3 minutes. Remove beef from wok.
  9. Add 2 tablespoons vegetable oil; rotate to coat.
  10. Add tomatoes; stir-fry for 30 seconds.
  11. Stir in 1/2 cup beef broth; heat to boiling.
  12. Stir in cornstarch mixture and cook, stirring until thickened.
  13. Add peppers and beef.
  14. Stir-fry for 30 seconds.
