Ingredients

  • 1 pint strawberries
  • 1/2 cup sugar
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon melted butter

Instructions

  1. Wash and drain strawberries, then press through a ricer or mash with a potato masher.
  2. In a bowl, sift together the dry ingredients: flour, sugar, salt, and baking powder.
  3. Combine the dry ingredients with the egg, milk, and melted butter until smooth.
  4. Pour the batter into a greased 9-inch square pan.
  5. Bake at 375°F (190°C) for 30 to 40 minutes until golden and a toothpick inserted in the center comes out clean.
  6. Top the cake with the mashed or pressed strawberries before serving for added flavor and decoration.
