Ingredients

  • 10 oz. package frozen sliced strawberries
  • 3 oz. package strawberry gelatin
  • 1/4 cup sugar
  • 1/2 cup cold water
  • 1/2 cup flaked coconut
  • 2/3 cup evaporated milk
  • 1 tablespoon lemon juice
  • 9-inch graham cracker crumb crust
  • 2 tablespoons toasted flaked coconut

Instructions

  1. Thaw frozen sliced strawberries, reserving the liquid.
  2. To the reserved juice, add water to make 3/4 cup.
  3. Heat the strawberry juice mixture to a boil.
  4. Add strawberry gelatin and sugar, stirring until dissolved.
  5. Add 1/2 cup cold water and chill until the mixture reaches the consistency of unbeaten egg whites.
  6. Fold in the flaked coconut, evaporated milk, and lemon juice into the chilled gelatin mixture.
  7. Pour the filling into the graham cracker crumb crust.
  8. Sprinkle toasted flaked coconut on top before serving.
