Ingredients

  • 5 eggs
  • 1 1/2 cups sugar
  • 1 3/4 to 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • Grated lemon peel of 1 lemon
  • Juice of 1 fresh lemon

Instructions

  1. Separate the egg whites from the yolks.
  2. Beat the egg whites until stiff and gradually add sugar while beating.
  3. Fold in the egg yolks into the egg white mixture.
  4. Gradually add the flour, vanilla, grated lemon peel, lemon juice, and oil, folding gently until combined.
  5. Pour the batter into a buttered spring-form pan.
  6. Bake at 350°F (175°C) for 45 to 50 minutes until the cake is done.
