Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon extract
  • 4 eggs, beaten
  • 3 cups all-purpose flour, sifted
  • 1/2 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 1/2 cup dairy sour cream
  • 1 cup strawberry jam
  • 1 cup pecans, chopped

Instructions

  1. In a large bowl, cream the butter and sugar.
  2. Blend in vanilla and lemon extracts, then add beaten eggs and beat mixture thoroughly.
  3. In a separate bowl, combine all-purpose flour, baking soda, cream of tartar, and salt; set aside.
  4. In a small bowl, blend together sour cream and strawberry jam.
  5. Gradually stir dry ingredients into the sugar-butter-egg mixture, alternating with the jam mixture, until well blended.
  6. Stir in chopped pecans.
  7. Pour batter into a greased and floured bread pan.
  8. Bake in preheated 350°F (175°C) oven for 45 to 50 minutes, until a toothpick inserted in the center comes out clean.
