Ingredients

  • 2 lb. string beans
  • 2 oz. butter
  • 2 oz. grated cheese
  • 2 eggs
  • 1 small onion
  • 3 oz. heavy cream
  • salt
  • pepper

Instructions

  1. Wash and boil the cleaned string beans in a pot with about 4 quarts of water and salt for about 15 minutes until tender, but not completely done.
  2. Drain the beans in a colander.
  3. Combine 1 ounce of butter and chopped onion in a pan and heat for about 2 minutes without browning.
  4. Add the beans, pepper, and nutmeg to the pan and stir for 2 more minutes.
  5. Pour the mixture into a buttered baking pan.
  6. Beat the eggs slightly and blend in the cream and grated cheese.
  7. Pour the egg mixture over the beans in the baking pan.
  8. Bake until a gratin is formed and golden brown on top.
