Ingredients

  • 6 large ripe red tomatoes
  • 2 stalks celery
  • 1/2 cup cooked lima beans
  • 1 pound fresh green pepper
  • salt and pepper to taste
  • 1/2 cup fresh corn cut off cob
  • 2 slices bread
  • 1/2 onion

Instructions

  1. Cut a thin slice from the top of each tomato and scoop out the pulp with a large spoon.
  2. Mix the pulp with the remaining ingredients and let stand.
  3. Place the tomatoes carefully in an 8-inch greased baking dish.
  4. Fill each tomato carefully with the mixture.
  5. Top the filled tomatoes with bread crumbs and grated cheese or butter.
  6. Bake at 375°F (190°C) for 30 minutes.
