Ingredients

  • 1 cup chopped onion
  • 3 Tbsp olive oil
  • 2 qt water
  • 1 lb peeled and chopped tomatoes
  • 2 lb shredded cabbage
  • 2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 2 Tbsp minced parsley

Instructions

  1. Saute the chopped onion in olive oil for 5 minutes.
  2. Add water and bring to a boil.
  3. Mix in peeled and chopped tomatoes, shredded cabbage, salt, and black pepper.
  4. Bring to a boil again and cook over low heat for 1 1/4 hours, or until the cabbage is tender.
  5. Taste for seasoning.
  6. Stir in minced parsley.
  7. Serve with sautéed bread.
