Ingredients

  • 1 large beef heart
  • 1 pint canned tomatoes
  • 2 cups bread cubes
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped celery
  • 2 tablespoons shortening
  • 3 whole black peppercorns
  • 1 bay leaf
  • 12 ounces beef broth
  • 1/2 cup water

Instructions

  1. Prepare the beef heart for stuffing by slicing it in half and removing the hard parts.
  2. Apply salt to taste.
  3. Close the slit with metal skewers, then lace and tie with string to form a pocket.
  4. Cook chopped onion in shortening until tender.
  5. Add chopped onion, celery, bread cubes, and enough beef broth to moisten the mixture.
  6. Stuff the heart lightly with the bread mixture and cover the opening with foil; tie it in place.
  7. Place the stuffed heart in a Dutch oven.
  8. Cover the heart with canned tomatoes and add the remaining ingredients including black peppercorns, bay leaf, beef broth, and water.
  9. Cover and simmer for 2 1/2 hours.
