Ingredients

  • long peppers as desired
  • 2 lb. Monterey Jack cheese (thick slices)
  • 5 egg whites
  • 5 egg yolks
  • 2 large onions
  • 3 large tomatoes

Instructions

  1. Roast peppers on a skillet until well toasted.
  2. Let peppers cool, peel the crust, cut a slice off the top, and scoop out the insides.
  3. Fill the peppers with slices of Monterey Jack cheese, tomatoes, and onions.
  4. Whip the egg whites until well combined, then add egg yolks and whip until foamy.
  5. Dip the stuffed peppers into the egg mixture and fry in heated oil until slightly brown.
