Ingredients

  • 4 large onions
  • 1 (10 oz.) package frozen peas
  • 4 oz. fresh mushrooms
  • 1/4 cup shredded carrots
  • 1/4 teaspoon leaf thyme
  • 1/8 teaspoon white pepper
  • 1/2 teaspoon chicken bouillon granules

Instructions

  1. Using a sharp knife, hollow out the center of each onion, leaving a 1/4-inch thick shell.
  2. Place the hollowed onions in an 8-inch square glass pan and set aside.
  3. In a medium bowl, mix the frozen peas, sliced mushrooms, shredded carrots, thyme, white pepper, and chicken bouillon granules.
  4. Fill each onion shell with the vegetable mixture.
  5. Cover the pan tightly with plastic wrap or a lid and microwave on High for 7 to 9 minutes until the onions are tender and the stuffing is hot throughout.
