Ingredients

  • 4 chicken breasts, boned and skinned
  • 9 fresh garlic cloves, peeled
  • 4 Tbsp. fresh lemon juice
  • 3 Tbsp. butter or margarine
  • 1 Tbsp. cooking oil
  • 1 cup sliced fresh mushrooms
  • 3/4 cup dry white wine
  • 1 tsp. salt
  • 1 bay leaf
  • 3/4 cup chicken broth
  • 1 1/2 tsp. Dijon style mustard
  • 1 Tbsp. parsley, chopped

Instructions

  1. Finely mince or press 4 garlic cloves and mix with 4 Tbsp. lemon juice in a small dish.
  2. Rub the garlic and lemon mixture over the chicken breasts or place the minced garlic and lemon juice in a large Ziploc bag with the chicken, then let stand for 15 minutes.
