- Coat the chicken breasts completely with Dijon mustard, then season with salt and freshly ground pepper to taste.
- Mix parsley into the bread crumbs, then coat the mustard-coated chicken with this mixture.
- Fry the chicken in a skillet with 3 tablespoons of butter and olive oil mixture on each side until browned.
- Drain most of the oil from the skillet and reduce the heat.
- Pour sherry over the chicken in the skillet and cook for a few minutes.
- Remove the chicken to a serving platter.
- Add 2 tablespoons of butter to the sherry in the pan, scraping the drippings until well blended.
- Pour the sherry butter sauce over the chicken and serve.
