Juicy chicken breasts coated in mustard and bread crumbs, then pan-fried and finished with a flavorful sherry butter sauce, perfect for elegant dinners or special occasions.

Ingredients

  • 6 boneless split chicken breasts
  • Dijon mustard
  • salt
  • freshly ground pepper
  • parsley
  • 2 cups bread crumbs
  • 1/4 cup olive oil
  • 3 tablespoons butter
  • 3/4 cup sherry

Instructions

  1. Coat the chicken breasts completely with Dijon mustard, then season with salt and freshly ground pepper to taste.
  2. Mix parsley into the bread crumbs, then coat the mustard-coated chicken with this mixture.
  3. Fry the chicken in a skillet with 3 tablespoons of butter and olive oil mixture on each side until browned.
  4. Drain most of the oil from the skillet and reduce the heat.
  5. Pour sherry over the chicken in the skillet and cook for a few minutes.
  6. Remove the chicken to a serving platter.
  7. Add 2 tablespoons of butter to the sherry in the pan, scraping the drippings until well blended.
  8. Pour the sherry butter sauce over the chicken and serve.
