Colorful stuffed peppers filled with seasoned ground beef, rice, and cheese, baked to perfection. A hearty, flavorful dish ideal for family dinners and gatherings.

Ingredients

  • 6 medium bell peppers
  • 1 1/2 lb ground beef
  • 1/2 cup chopped onion
  • 1 1/2 cups cooked rice
  • 1/4 cup diced bell pepper
  • 1/4 cup seasoned bread crumbs
  • 1 tablespoon Cajun seasoning
  • 1/4 pound butter or margarine
  • 1/3 cup water
  • 1 1/2 slices cheese

Instructions

  1. Cut the tops off the bell peppers and save them; remove the seeds.
  2. Rinse and drain the peppers.
  3. In a 10-inch skillet, brown the ground beef; drain excess fat.
  4. Dice the saved tops of the peppers.
  5. Add chopped onion, cooked rice, diced pepper, seasoned bread crumbs, Cajun seasoning, and butter or margarine to the skillet.
  6. Cook on low heat for 10 minutes, stirring occasionally.
  7. Fill each pepper with the mixture.
  8. Place the filled peppers in a glass baking dish.
  9. Pour water into the bottom of the dish.
  10. Cover the dish with plastic wrap.
  11. Microwave on Roast setting for 12 to 15 minutes.
  12. Remove from microwave and carefully remove the plastic wrap.
  13. Cover each pepper with a quarter slice of cheese.
  14. Let stand for 5 minutes before serving.
