Ingredients

  • 6 large bell peppers
  • 1 (32 oz.) jar spaghetti sauce
  • 2 cups leftover meat loaf
  • 1 1/2 cups leftover rice
  • 1/4 cup onion
  • 1/4 cup hot pepper
  • 3/4 cup cheddar cheese

Instructions

  1. Boil the bell peppers for 3 minutes, then drain.
  2. In a saucepan, combine spaghetti sauce, crumbled meat loaf, leftover rice, chopped onion, chopped hot pepper, and cook until heated thoroughly.
  3. Stuff each bell pepper with the mixture.
  4. Bake the stuffed peppers at 375°F for about 12 minutes.
  5. Top the peppers with shredded cheddar cheese.
  6. Turn off the oven and return the peppers until the cheese is melted.
