Ingredients

- 2 cups sugar ⓘ
- 1 cup vegetable oil ⓘ
- 1 (16 oz.) can pumpkin ⓘ
- 2 cups all-purpose flour ⓘ
- 2 teaspoons baking powder ⓘ
- 2 teaspoons ground cinnamon ⓘ
- 1 teaspoon baking soda ⓘ
- 3/4 teaspoon salt ⓘ
- 1/2 teaspoon ground ginger ⓘ
- 1/4 teaspoon ground cloves ⓘ
- 1/2 cup raisins ⓘ
- 1/2 cup chopped nuts (optional) ⓘ
Instructions
- Preheat oven to 350°F (175°C). Grease a 9 x 13-inch pan.
- Beat eggs, sugar, oil, and pumpkin together until well combined.
- Stir in flour, baking powder, cinnamon, baking soda, salt, ginger, and cloves.
- Mix in raisins and chopped nuts (if using). Pour batter into the prepared pan.
- Bake until light brown and a toothpick inserted into the center comes out clean, about 25 to 30 minutes.
- Allow to cool, then cut into bars measuring approximately 2 x 1.5 inches and serve.
