Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 (16 oz.) can pumpkin
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup raisins
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9 x 13-inch pan.
  2. Beat eggs, sugar, oil, and pumpkin together until well combined.
  3. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger, and cloves.
  4. Mix in raisins and chopped nuts (if using). Pour batter into the prepared pan.
  5. Bake until light brown and a toothpick inserted into the center comes out clean, about 25 to 30 minutes.
  6. Allow to cool, then cut into bars measuring approximately 2 x 1.5 inches and serve.
