Ingredients

  • 4 medium baking potatoes
  • 1 medium zucchini, diced
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons water
  • 2 cups cooked, chopped chicken
  • 1 (8 oz.) can tomato sauce
  • 1 (8 oz.) can stewed tomatoes
  • 3/4 teaspoon dried Italian seasonings
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Scrub potatoes and prick with a fork.
  2. Cook potatoes uncovered in microwave on 100% power for 13 to 16 minutes.
  3. Let potatoes sit while making sauce.
  4. Combine zucchini, onion, garlic, and water in a covered container.
  5. Cook on High for 3 to 5 minutes or until tender.
  6. Drain vegetables. Stir in cooked, chopped chicken, tomato sauce, stewed tomatoes, and Italian seasonings.
  7. Cook covered for 5 to 7 minutes until heated through.
  8. Split potatoes and mash centers.
  9. Add salt and pepper to taste.
  10. Spoon sauce on top of potatoes, then sprinkle with shredded mozzarella cheese.
  11. Return to microwave to melt the cheese.
