A tender beef tenderloin stuffed with a savory spinach and Parmesan mixture, baked to perfection for an elegant and flavorful main course suitable for special occasions.

Ingredients

  • 1 onion, diced
  • 2 Tbsp. olive oil
  • 1/2 lb. spinach, chopped
  • salt and pepper to taste
  • 1/3 cup Parmesan cheese, shredded
  • 3 Tbsp. tomatoes in oil, drained and chopped
  • 1 (4 lb.) beef tenderloin

Instructions

  1. Saute diced onion in olive oil over medium heat until tender.
  2. Add chopped spinach, salt, and pepper; saute until the spinach wilts.
  3. Stir in shredded Parmesan cheese and chopped tomatoes in oil.
  4. Cut the beef tenderloin lengthwise down the center without cutting all the way through.
  5. Lay the tenderloin flat and spoon the spinach mixture down the center.
  6. Secure the tenderloin with string.
  7. Place the stuffed tenderloin cut side up in a casserole dish.
  8. Cover with foil and bake at 425°F for 50 minutes.
