- Saute diced onion in olive oil over medium heat until tender.
- Add chopped spinach, salt, and pepper; saute until the spinach wilts.
- Stir in shredded Parmesan cheese and chopped tomatoes in oil.
- Cut the beef tenderloin lengthwise down the center without cutting all the way through.
- Lay the tenderloin flat and spoon the spinach mixture down the center.
- Secure the tenderloin with string.
- Place the stuffed tenderloin cut side up in a casserole dish.
- Cover with foil and bake at 425°F for 50 minutes.
