Ingredients

  • 2 to 3 medium potatoes, diced
  • 2 carrots, sliced thin
  • 1 to 2 stalks celery, chopped
  • 1 quart half and half
  • small to medium onion, chopped
  • 4 tablespoons butter
  • 1 pint shucked oysters and their liquid
  • parsley (optional)

Instructions

  1. Cook potatoes and carrots by steaming or microwaving until tender.
  2. Sauté onions and celery in butter in a pan until translucent.
  3. Strain the cooked potatoes and carrots and add them to the pan.
  4. Pour in the half and half, season with ground pepper, and bring to a boil.
  5. Add the shucked oysters and their liquid just before serving, and heat until oysters are cooked through.
