Ingredients

  • 1 c. butter
  • 1 c. oil
  • 1 c. sugar
  • 1 c. powdered sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 4 c. flour
  • 2 to 3 Tbsp. chopped mint

Instructions

  1. Mix all the ingredients together until well combined.
  2. If the dough sticks to your hands, add 1 tablespoon of flour at a time until manageable.
  3. Form the dough into balls about the size of an olive and place them on a cookie sheet.
  4. Flatten each ball with a glass dipped in sugar, as the cookies will spread during baking.
  5. Bake at 375°F (190°C) for 6 to 8 minutes or until the cookies are light brown and firm to the touch.
