Ingredients

  • 8 oz. package lemon Jell-O
  • 1/2 cup chopped celery
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped green onion
  • 1/2 cup chopped zucchini squash
  • 1/2 cup chopped yellow squash

Instructions

  1. Prepare lemon Jell-O by following package directions using a large bowl.
  2. Chill the Jell-O until almost set.
  3. Stir in all finely chopped vegetables: celery, bell pepper, green onion, zucchini squash, and yellow squash.
  4. Chill until the Jell-O is fully set.
  5. Serve on a bed of lettuce, topped with a small dab of mayonnaise for garnish.
