Ingredients

  • 1 lb yellow squash, chopped
  • 1/4 cup butter or margarine, melted
  • 1 cup biscuit mix
  • 4 eggs, beaten
  • 1/4 cup vegetable oil
  • 1/2 teaspoon garlic powder
  • 1 tablespoon dry onion soup mix
  • 1 tablespoon seasoned salt (optional)

Instructions

  1. Steam the yellow squash and onion for 10 to 12 minutes or microwave for 5 minutes until tender.
  2. Drain the vegetables and finely chop or mash them. Mix in the melted butter and set aside.
  3. Preheat the oven and prepare a baking pan.
  4. In a mixing bowl, combine biscuit mix, beaten eggs, vegetable oil, garlic powder, dry onion soup mix, and seasoned salt if using.
  5. Fold in the cooked squash mixture until well combined.
  6. Pour the batter into the prepared baking pan.
  7. Bake for approximately 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving.
