Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 2 tablespoons margarine
  • 2 cups diced fresh tomatoes
  • 2 cups zucchini sliced
  • 1 cup frozen or fresh corn
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 2 tablespoons flour
  • 2/3 cup evaporated milk

Instructions

  1. In a saucepan, cook onion and green pepper in margarine until limp.
  2. Add tomatoes, zucchini, corn, salt, sugar, and pepper; heat until vegetables are tender.
  3. Combine flour and evaporated milk until smooth.
  4. Stir the flour-milk mixture into the hot vegetable mixture.
  5. Bring to a boil and stir for 1 minute.
  6. Pour the mixture into a baking dish and top with French fried onion rings.
  7. Brown briefly under the broiler until golden.
