- Brown the chopped onion in butter.
- Add diced potatoes to the onion and cook until tender.
- Layer the cooked potatoes, onion, and meat (sausage, bacon, or ham) in a greased 9 x 13-inch pan.
- In a bowl, beat the eggs as if you were going to scramble them.
- Pour the beaten eggs over the layered mixture.
- Bake uncovered in a 300°F (150°C) oven for 30 minutes.
- Stir every 5 to 10 minutes during baking to ensure even cooking.
- Top with grated cheese during the last 5 minutes of baking.
