A hearty Sunday brunch casserole combining eggs, potatoes, sausage, and cheese for a comforting, flavorful dish perfect for family gatherings or weekend mornings.

Ingredients

  • 1 dozen eggs
  • 1 onion, chopped
  • 3 Tbsp. butter
  • 4 to 6 medium potatoes, diced
  • 1 lb. sausage, browned and crumbled
  • 1 cup cheese, grated

Instructions

  1. Brown the chopped onion in butter.
  2. Add diced potatoes to the onion and cook until tender.
  3. Layer the cooked potatoes, onion, and meat (sausage, bacon, or ham) in a greased 9 x 13-inch pan.
  4. In a bowl, beat the eggs as if you were going to scramble them.
  5. Pour the beaten eggs over the layered mixture.
  6. Bake uncovered in a 300°F (150°C) oven for 30 minutes.
  7. Stir every 5 to 10 minutes during baking to ensure even cooking.
  8. Top with grated cheese during the last 5 minutes of baking.
