Ingredients

  • 4 lb. round beef
  • 1 c. flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. tomatoes
  • 2 medium onions
  • 1/2 c. fat
  • 2 c. hot water

Instructions

  1. Salt and pepper the beef roast on both sides.
  2. Mix the remaining salt and pepper with the flour.
  3. Dredge the beef roast in the flour mixture on both sides.
  4. Melt the fat in a roaster or iron skillet.
  5. Sear the roast until medium brown on both sides to lock in juices.
  6. Turn the heat down to low or medium-low.
  7. Add 2 cups of hot water to the pan.
  8. Add the chopped onions and cook covered for 1 hour.
  9. Add the tomatoes and salt to taste, then simmer for 1 hour.
