Ingredients

  • 1 1/2 cups self-rising cornmeal
  • 2 eggs
  • 1/3 cup cooking oil
  • 1/2 cup minced onion
  • 1 (8 oz.) can creamed corn
  • 1 (8 oz.) carton sour cream
  • 1 cup grated Cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. Grease and heat a 9-inch baking pan or skillet.
  3. Combine cornmeal, beaten eggs, cooking oil, minced onion, creamed corn, sour cream, and grated Cheddar cheese in a bowl.
  4. Pour the mixture into the prepared pan.
  5. Bake for 35 to 40 minutes until golden brown and cooked through.
