Sunday Supper Soup
Ingredients
- 1 1/2 lb. ground beef ⓘ
- 1 egg, slightly beaten ⓘ
- 1/2 c. soft bread crumbs ⓘ
- 1/4 tsp. salt ⓘ
- 1 Tbsp. chopped parsley ⓘ
- 1 (10 1/2 oz.) can condensed beef broth, undiluted ⓘ
- 1 (1 lb. 12 oz.) can tomatoes, undrained ⓘ
- 1 envelope dry onion soup mix ⓘ
- 2 c. (4 or 5) sliced pared carrots ⓘ
- 1/4 c. chopped celery tops ⓘ
- 1/4 c. chopped parsley
- 1/4 tsp. pepper ⓘ
- 1/4 tsp. dried oregano leaves ⓘ
- 1/4 tsp. dried basil leaves ⓘ
Instructions
- Make meatballs:
- In a bowl combine beef, egg, 3 tablespoons water, bread crumbs, salt and parsley; mix lightly.
- With hands shape into 24 balls.
- Brown meatballs in a 350° oven.
- Drain off fat; set meatballs aside.
