Ingredients

  • 4 potatoes
  • 1 pinch sea salt
  • 1 pinch cayenne
  • 2 cups mild Cheddar cheese
  • 2 cups cashews
  • 1 cup sunflower seeds

Instructions

  1. Cut baked and cooled potatoes into 1-inch cubes and place in a baking dish. Sprinkle with sea salt and cayenne pepper.
  2. Cover the potatoes with grated Cheddar cheese and sprinkle cashews and sunflower seeds on top.
  3. Bake at 350°F (175°C) until the cheese bubbles, about 10 minutes.
  4. Broil for 2 minutes until golden and crispy.
