Ingredients

  • 1/3 cup orange marmalade
  • 1/2 cup cream
  • 2 tablespoons light corn syrup
  • 2 cups sugar
  • 3 tablespoons cocoa
  • 1/2 cup butter or margarine, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Combine marmalade, cream, and corn syrup in a blender or food processor.
  2. Process until well blended.
  3. In a large saucepan, combine the sugar and cocoa.
  4. Mix well. Add softened butter along with the milk/marmalade mixture.
  5. Mix well.
  6. Bring to a boil and cook until the mixture reaches the soft ball stage, about 2 to 3 minutes.
  7. Remove from heat and stir in vanilla extract.
  8. Place the pan in a large pan of cold water and allow to cool before beating.
  9. Beat until the mixture thickens and is no longer glossy, which may take 20 to 30 minutes.
  10. Drop from a spoon onto wax paper or pour into a well-buttered 8-inch square dish or pan.
