Ingredients

  • 1 1/2 cups cooked beef
  • 1 1/2 cups shredded sharp Cheddar cheese, divided
  • 1/2 cup chopped onion
  • 1 can condensed tomato soup
  • 1 can cream of mushroom soup
  • 1 can mild enchilada sauce
  • 12 corn tortillas
  • 2 tablespoons oil

Instructions

  1. Combine cooked beef, half of the shredded cheddar cheese, and chopped onion in a bowl. Cook until the cheese melts.
  2. In a separate bowl, mix the condensed tomato soup, cream of mushroom soup, and mild enchilada sauce. Set aside.
  3. Dip each corn tortilla into hot oil to soften.
  4. Place a portion of the meat mixture on each tortilla, then roll up.
  5. Place the rolled tortillas seam side down in a 13 x 9 inch baking dish.
  6. Pour the sauce mixture over the rolled tortillas.
  7. Sprinkle the remaining shredded cheese on top.
  8. Bake at 350°F for 25 to 30 minutes until bubbly and golden.
