Super Garlicky Mashed Potatoes

Ingredients

  • 1 1/2 pounds russet potatoes, peeled, cut into 1-inch pieces
  • 1 pound red-skinned potatoes (about 3 large), peeled, cut into 1-inch pieces
  • 2 tablespoons (1/4 stick) butter
  • 2 tablespoons olive oil
  • 1/4 cup chopped garlic
  • 1/4 cup (or more) milk

Instructions

  1. Cook all potatoes in large pot of boiling salted water until very tender, about 15 minutes.
  2. Drain.
  3. Return potatoes to pot.
  4. Meanwhile, melt butter with oil in small skillet over medium heat.
  5. Add garlic and saute until golden, about 5 minutes.
  6. Add garlic mixture to potatoes and mash.
  7. Add 1/4 cup milk and stir until potato mixture is smooth, adding more milk by tablespoons if potatoes are dry.
  8. Season with salt and pepper.
